For the Beef:
- 1 lb sirloin or flank steak, thinly sliced against the grain
- ¾ tsp baking soda (optional, for tenderizing)
For the Vegetables:
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 carrot, thinly sliced
- 1 cup snow peas
- ½ cup mushrooms, sliced
- 1 small onion, sliced
For the Sauce:
- 3 tbsp low-sodium soy sauce
- 2 tbsp beef broth
- 1 tbsp rice wine vinegar
- 2 tsp sesame oil
- 1 tbsp brown sugar or honey
- 1 tbsp cornstarch, mixed with 2 tbsp cold water
For Cooking:
- 2 tbsp avocado oil (or other high smoke-point oil)
- 1 tsp minced garlic
- 1 tsp minced ginger

Prepare the Beef:
- (Optional) Toss sliced beef with baking soda and let sit for 15 minutes. Rinse and pat dry.
- Set aside.

Prep the Vegetables:
- Blanch dense vegetables like broccoli and carrots in boiling water for 60 seconds, then shock in ice water. Drain and set aside.

Make the Sauce:
- In a small bowl, whisk together soy sauce, beef broth, rice wine vinegar, sesame oil, brown sugar, and cornstarch mixture.

Cook the Stir Fry:
- Heat a wok or large skillet over medium-high heat. Add 1 tbsp oil.
- Sear the beef in small batches for 2-3 minutes until just cooked. Remove and set aside.
- Add remaining oil to the wok. Stir-fry garlic and ginger for 30 seconds.
- Add broccoli, carrots, and other dense vegetables. Stir-fry for 2 minutes.
- Toss in softer vegetables like mushrooms and snow peas. Stir-fry for another minute.
- Return the beef to the wok and pour in the sauce. Stir well until the sauce thickens and coats all ingredients evenly.

Serve:
- Garnish with sliced green onions, sesame seeds, or toasted nuts. Serve hot over steamed rice or noodles.
Notes
- Use partially frozen beef for easier slicing.
- To avoid overcooking, remove beef while stir-frying vegetables.
- Adjust sweetness or saltiness of the sauce to your preference.
- Leftovers can be refrigerated for up to 3 days.
