For the Sauce:

  • 1 tbsp rice wine vinegar
  • 2 tsp sesame oil
  • 1 tbsp brown sugar or honey
  • 1 tbsp cornstarch, mixed with 2 tbsp cold water

  • 2 tbsp avocado oil (or other high smoke-point oil)
  • 1 tsp minced garlic
  • 1 tsp minced ginger

Instructions

  1. Prepare the Beef:

    • (Optional) Toss sliced beef with baking soda and let sit for 15 minutes. Rinse and pat dry.
    • Set aside.
  2. Prep the Vegetables:

    • Blanch dense vegetables like broccoli and carrots in boiling water for 60 seconds, then shock in ice water. Drain and set aside.
  3. Make the Sauce:

    • In a small bowl, whisk together soy sauce, beef broth, rice wine vinegar, sesame oil, brown sugar, and cornstarch mixture.
  4. Cook the Stir Fry:

    • Heat a wok or large skillet over medium-high heat. Add 1 tbsp oil.
    • Sear the beef in small batches for 2-3 minutes until just cooked. Remove and set aside.
    • Add remaining oil to the wok. Stir-fry garlic and ginger for 30 seconds.
    • Add broccoli, carrots, and other dense vegetables. Stir-fry for 2 minutes.
    • Toss in softer vegetables like mushrooms and snow peas. Stir-fry for another minute.
    • Return the beef to the wok and pour in the sauce. Stir well until the sauce thickens and coats all ingredients evenly.
  5. Serve:
