- 1 lb chicken breast (or rotisserie chicken)
- 2 cups broccoli (fresh or frozen)
- 1 ½ cups rice (long-grain white rice preferred)
- 1 can cream of chicken soup
- ½ cup sour cream
- 1 cup shredded cheddar cheese
- 1 small onion, grated
- 2 cloves garlic, grated
- Salt and pepper to taste
Optional Substitutes:
- Greek yogurt for mayonnaise
- Colby, Monterey Jack, or Swiss cheese for cheddar
- Cream of mushroom or cream of broccoli soup instead of cream of chicken
- Cauliflower or extra broccoli as a substitute for broccoli
Instructions
- Preheat oven to 350°F (140°C).
- Grease a 9×13-inch casserole dish.
- Spread rice evenly across the bottom of the dish.
- Layer seasoned chicken pieces over the rice.
- Add broccoli florets evenly over the chicken.
- Mix cream of chicken soup, sour cream, grated onion, and garlic, then pour over the casserole.
- Top with shredded cheddar cheese.
- Cover the casserole with foil and bake for 55-60 minutes.
- Remove the foil and bake for another 10-15 minutes until the top is golden brown.
- Let the casserole rest for 5-10 minutes before serving.
Notes
- Make-Ahead: Can be made up to 2 days in advance and stored in the fridge. Bake at 350°F for 30 minutes covered, then uncover for an additional 20 minutes.
- Freezing: Casserole can be frozen for up to 2 months. Wrap tightly and store in a freezer-safe dish.
- Rice Alternatives: Brown rice can be used, but it requires more liquid and cooking time.
