Ingredients
Scale
- 1 box (15.25 oz) cake mix (any flavor)
- 2 large eggs
- 1/2 cup vegetable oil or melted butter
Optional Mix-ins (3/4 to 1 cup total):
- Chocolate chips, M&Ms, chopped nuts, sprinkles, etc.
Instructions
- Preheat the Oven: Set your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.
- Mix the Dough: In a large bowl, combine the eggs and oil until smooth. Add the cake mix and stir with an electric mixer until fully blended. If using mix-ins, fold them in gently.
- Chill (Optional): If the dough feels too sticky, refrigerate for 30 minutes.
- Scoop and Shape: Use a cookie scoop or spoon to portion 2-tablespoon-sized balls of dough. Place them 2 inches apart on the prepared baking sheet.
- Bake: Bake for 10-12 minutes or until the edges are set and lightly golden. The centers may appear slightly underbaked.
- Cool: Allow cookies to cool on the baking sheet for 4 minutes, then transfer them to a wire rack to cool completely.
Notes
- Customization: Experiment with different cake mix flavors and mix-ins for endless variations.
- Texture Tips: For chewier cookies, add an extra egg. For crisper cookies, use oil instead of butter.
- Storage: Store in an airtight container at room temperature for up to a week.
